Ingredients
- 320 grams of Arborio or Carnaroli rice
- 400 grams of cleaned pumpkin
- 250 grams of mushrooms (porcini or champignons depending on preference)

- 1 liter of vegetable broth
- 1 small onion
- Dry white wine to taste
- Extra virgin olive oil
- 30 grams of butter
- Grated Parmesan cheese to taste
- Salt and pepper to taste
- Chopped fresh parsley (optional)
Preparation
- Start by cutting the pumpkin into small cubes. Clean the mushrooms with a damp cloth and slice them.
- Finely chop the onion and sauté it in a pan with a drizzle of extra virgin olive oil until transparent.
- Add the pumpkin cubes to the pan and let them cook for a few minutes.

- Adjust salt and pepper if necessary, and serve hot, garnished with chopped fresh parsley if desired.
