Pumpkin Linguine

Ingredients

  • 320 g of linguine
  • 400 g of cleaned pumpkin
  • 1 shallot
  • 1 clove of garlic
  • 250 ml of vegetable broth
  • 100 ml of cooking cream (optional for a creamier version)
  • 50 g of grated Parmesan cheese
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Chopped parsley (optional for garnishing)
  • Chopped walnuts (optional to add crunchiness)

Preparation

  1. Cut the pumpkin into small cubes to facilitate cooking. Thinly slice the shallot and garlic.
  2. In a large pan, heat a drizzle of extra virgin olive oil and sauté the shallot and garlic until they become translucent.
  3. Add the pumpkin cubes to the pan and let them sauté for a few minutes. Then cover with vegetable broth and cook on medium-low heat until the pumpkin has softened.
  4. (Optional) For a creamier version of the dish, now add the cooking cream and mix well.
  5. With an immersion blender or a mixer, blend part of the pumpkin into a cream, leaving some pieces for a more substantial texture in the dish.
  6. Cook the linguine in plenty of salted water following the cooking times indicated on the package, drain them al dente keeping some of the cooking water.
  7. Transfer the linguine to the pan with the pumpkin cream, add the Parmesan, and, if necessary, a bit of the pasta cooking water to make the pasta creamier.
  8. Taste and adjust the salt and pepper according to your taste.
  9. Serve the linguine hot, garnished with chopped parsley and, if you like, with chopped walnuts for a crunchy touch to the dish.
