Pumpkin Lasagna with Mushroom Cream and Scamorza

Ingredients

Preparation

  1. Start by cooking the pumpkin. You can steam it, cook it in a pan with a bit of water and oil, or even bake it at 180 °C for about 30 minutes. The important thing is that it becomes soft.

  2. In a skillet, sauté the garlic clove in oil and add the previously cleaned and sliced mushrooms. Let them cook until they are golden and all the vegetation water has evaporated. Season with salt and pepper to taste.

  3. When the pumpkin is ready, mash it with a fork or blend it with an immersion mixer until you obtain a smooth cream. If you wish, you can add a pinch of nutmeg for additional flavor.

  4. Prepare the béchamel sauce following your favorite recipe or the classic one with milk, butter, flour, salt, and nutmeg. It should be quite thick.

  5. Cut the smoked Scamorza cheese into small cubes or slices.

  6. Now assemble the lasagna: grease a baking dish with butter and begin with a layer of béchamel, then lay down a layer of lasagna sheets, a layer of pumpkin cream, then mushrooms and Scamorza cheese. Continue alternating the layers and finish with a generous sprinkling of Parmesan and some small pats of butter.

  7. Bake in a preheated oven at 180 °C for about 30-40 minutes or until the surface is golden and crispy.

  8. Let the lasagna rest for at least ten minutes before serving, to allow it to settle and not break during cutting.
