Pumpkin Flan

Ingredients

  • 600 g of cleaned pumpkin
  • 2 eggs
  • 100 g of grated Parmesan cheese
  • 200 ml of cooking cream
  • Nutmeg as needed
  • Salt and pepper as needed
  • Butter and breadcrumbs to grease and sprinkle the ramekins

Preparation

  1. Start by cutting the pumpkin into pieces and baking it in the oven at 180 °C for about 30 minutes or until it is very soft, or you can steam it or cook it in a pan with a little oil and some water, covering it with a lid.

  2. Once the pumpkin is cooked and soft, mash it with a fork or pass it through a vegetable mill to obtain a puree.

  3. In a bowl, mix the pumpkin puree with the eggs, cream, Parmesan, a pinch of nutmeg, salt, and pepper until you get a smooth mixture.

  4. Grease the ramekins with some butter and sprinkle them with breadcrumbs, removing the excess.

  5. Pour the mixture into the ramekins and bake in the oven at 180 °C for about 20-25 minutes, until the flans are golden and well cooked inside. To check for doneness, you can insert a toothpick in the center: if it comes out clean, they are ready.

  6. Let the flans rest for a few minutes before gently unmolding and serving them.
