Pumpkin Cutlets
17/11/2023Pumpkin cutlets are a tasty vegetarian dish that can offer a delicious alternative to classic meat cutlets. Here is the recipe with an Italian twist:
Ingredients
- 500 g of pumpkin (cleaned and peeled)
- 2 eggs
- 150 g of breadcrumbs
- 50 g of grated Parmesan cheese
- Flour as needed
- Salt and pepper as needed
- Nutmeg as needed
- Olive or seed oil for frying
Preparation
- Cut the pumpkin into slices about 1 cm thick, trying to make them as uniformly as possible so they cook evenly.
- In a deep plate, beat the eggs with a pinch of salt, pepper, and a grating of nutmeg.
- In a separate plate, mix the breadcrumbs with the grated Parmesan.
- Dredge the pumpkin slices first in flour, then dip them in the beaten egg, and finally coat them in the breadcrumbs mixed with Parmesan, making sure each slice is well breaded on all sides.
- Heat plenty of oil in a wide pan and, when it’s hot, fry the breaded pumpkin slices until they turn golden on both sides.
- As the pumpkin cutlets are ready, drain them on paper towels to remove excess oil.
- Serve them hot and crispy.
As a variation, for a lighter version, you can bake the pumpkin cutlets in the oven at 200 °C for about 20 minutes or until they are golden, turning them halfway through cooking to ensure they brown evenly.
