Pumpkin Cookies

Ingredients
- 250 g of pumpkin puree
- 350 g of all-purpose flour
- 150 g of brown sugar
- 100 g of butter at room temperature
- 1 egg
- 1 teaspoon of baking powder
- 1 teaspoon of ground cinnamon
- A pinch of nutmeg
- A pinch of salt
- Powdered sugar (for decoration, optional)
Preparation
- Preheat the oven to 180 °C and prepare a baking tray lined with parchment paper.
- In a bowl, mix the sifted flour, baking powder, cinnamon, nutmeg, and the pinch of salt.
- In another bowl, cream the butter with the brown sugar until the mixture is fluffy.
- Add the egg to the butter and sugar mixture and continue to mix until it is completely absorbed.
- Incorporate the pumpkin puree and mix well.
- Combine the dry ingredients with the wet mixture and work the dough until it forms a uniform mixture.
- With the help of a spoon, scoop portions of the dough onto the tray, leaving some space between each cookie.
- Bake in the oven for about 15-20 minutes or until the cookies are slightly golden.
- Let the cookies cool on the tray for a few minutes, then transfer them to a wire rack to finish cooling.
- If you wish, you can dust the cookies with powdered sugar before serving.
