Ingredients
- For the base:
- 250 g of dry biscuits (like Digestive)
- 100 g of melted butter
- For the filling:
- 400 g of cooked and blended pumpkin
- 500 g of cream cheese (like Philadelphia or another spreadable cheese)
- 150 g of brown sugar
- 3 eggs
- 1 tablespoon of cornstarch (corn flour)
- 1 teaspoon of ground cinnamon
- A pinch of nutmeg
- A pinch of ground ginger
- To decorate:
- Whipped cream (optional)
- Grated orange zest (optional)
Preparation
- Start with the base: blend the biscuits until you get a coarse flour. Mix the blended biscuits with the melted butter until you have a homogenous mixture.
- Line the bottom of a springform pan (preferably 22-24 cm in diameter) with parchment paper and press the biscuit mixture down firmly, forming a crust about 2 cm high along the sides. Refrigerate to set for about 30 minutes.
- Meanwhile, prepare the filling: in a large bowl, mix the cream cheese with the brown sugar until you get a smooth mixture.
- Add the eggs, one at a time, continuing to stir.
- Mix in the cooked and blended pumpkin well.
- Add the cornstarch and spices (cinnamon, nutmeg, and ginger) and stir until the filling is homogenous.
- Pour the filling into the firmed biscuit base.
- Bake in a preheated oven at 160 °C for about 50-60 minutes or until the surface seems set but still slightly wobbly in the center.
- Turn off the oven and let the cheesecake cool inside with the door slightly open to avoid cracking.
- Once cool, place it in the refrigerator for at least 4 hours, better if overnight.
- Before serving, you can decorate with whipped cream and grated orange zest for a touch of freshness.
