Pumpkin Cappuccino
17/11/2023Pumpkin Cappuccino is an interesting culinary interpretation where the pumpkin is transformed into a delicious cream that resembles the texture of a cappuccino, possibly enriched with a foam or cheese cream to simulate the froth. Here is the recipe:
Ingredients
- 500 g of pumpkin pulp
- 1 small onion
- 500 ml of vegetable or chicken broth
- 200 ml of fresh cream
- Extra virgin olive oil to taste
- Salt and pepper to taste
- Nutmeg (optional)
- Grated Parmesan cheese to taste (optional)
- A few sage leaves for garnish (optional)
For the foam (optional):
- 100 ml of fresh cream
- 50 g of goat cheese or another creamy cheese
- Salt and pepper to taste
Preparation
- Start by cleaning the pumpkin, removing the skin and seeds and cutting it into cubes.
- Finely chop the onion and sauté it in a pot with a drizzle of oil until it is translucent.
- Add the pumpkin cubes to the sauté and let them flavor for a few minutes.
- Pour the vegetable or chicken broth over the pumpkin until it is covered and bring to a boil.
- Lower the heat and simmer until the pumpkin is soft, for about 15-20 minutes.
- In the meantime, if you want to make the foam, whip the fresh cream, gently fold in the goat cheese, adjust with salt and pepper, and set aside in the refrigerator.
- When the pumpkin is cooked, remove the pot from the heat, season with salt, pepper, and nutmeg.
- Blend everything with an immersion blender until you get a smooth and homogeneous cream. If you want a more velvety texture, you can strain the cream through a sieve.
- Put the cream back on the heat, add the fresh cream and heat without boiling.
- Serve the hot pumpkin cream in cappuccino cups, top with a spoonful of cheese foam and, if desired, decorate with grated Parmesan and sage leaves.
For an Italian twist, you can garnish with homemade bread croutons toasted in a pan with a drizzle of extra virgin olive oil and a clove of garlic, perfect for adding crunchiness to the dish.
