Pumpkin Chocolate Chip Plumcake
17/11/2023The pumpkin chocolate chip plumcake is a delicious autumnal dessert that combines the sweet and slightly earthy flavor of pumpkin with the richness of chocolate. Here’s how to make it:
Ingredients
- 300 g of pumpkin (already cleaned and grated)
- 300 g of all-purpose flour
- 100 g of melted butter (or vegetable oil as an alternative)
- 150 g of sugar
- 3 eggs
- 100 g of dark chocolate (chopped or chips)
- 1 packet of baking powder
- 1 pinch of salt
- 1 teaspoon of ground cinnamon (optional)
- 1 pinch of nutmeg (optional)
Preparation
-
Preheat the oven to 180 degrees C and butter and flour a loaf pan, or line it with parchment paper.
-
In a large bowl, mix the grated pumpkin with the melted butter (or vegetable oil) and sugar until you have a uniform mixture.
-
Add the eggs one at a time, mixing well after each addition.
-
In a separate bowl, combine the flour with the baking powder, salt, cinnamon, and nutmeg. Sift them and add these dry ingredients to the pumpkin mixture, mixing gently until they are well combined.
-
Finally, fold in the chopped dark chocolate or chips into the batter.
-
Pour the mixture into the prepared pan and level it with a spatula.
-
Bake for about 45-50 minutes or until a toothpick inserted in the center of the plumcake comes out clean.
-
Once baked, let the plumcake cool in the pan for about ten minutes, then transfer it onto a wire rack to cool completely.
Want an extra touch? Think about garnishing it, once cool, with a frosting made of cream cheese mixed with powdered sugar and a pinch of cinnamon. Alternatively, to maintain the autumnal theme, you could simply sprinkle it with powdered sugar and serve it with a cup of cinnamon tea or hot chocolate.
Curiosity
Pumpkin is a highly versatile ingredient and represents an icon of autumn and its related festivities, such as Halloween and American Thanksgiving. Introducing pumpkin into desserts like this plumcake allows for the experimentation of seasonal flavors while simultaneously adding moisture and softness to the preparations.
