Zucchini rolls in puff pastry

Ingredients

  • 1 roll of rectangular puff pastry
  • 2 medium zucchinis
  • 100 g of cooked ham
  • 100 g of spreadable cheese (such as Philadelphia or stracchino)
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Fresh aromatic herbs as desired (basil, mint, thyme)

Preparation

  1. Preheat the oven to 180 °C.
  2. Wash the zucchinis and slice them thinly lengthways, using a mandoline or a sharp knife.
  3. Heat a grill or pan and quickly grill the zucchini slices on both sides. Then, season with a drizzle of oil, salt, and pepper.
  4. Unroll the puff pastry and, if necessary, roll it out slightly with a rolling pin to obtain an even thickness.
  5. Spread the spreadable cheese over the surface of the puff pastry evenly.
  6. Lay the slices of cooked ham on top of the cheese.
  7. Place the grilled zucchini slices on top of the ham, forming a uniform layer.
  8. Gently roll up the puff pastry to form a roll. Use a knife to cut the roll into rounds about 2 cm thick.
  9. Arrange the rolls on a baking sheet lined with parchment paper, making sure they are spaced apart.
  10. Bake for about 15-20 minutes or until the rolls are golden and crispy.
  11. Remove from the oven and let cool slightly before serving.
