Ingredients
- 1 roll of ready-to-use puff pastry
- 500 g of zucchini
- 200 g of cherry tomatoes
- 2 eggs
- 150 ml of heavy cream
- 50 g of grated Parmesan cheese
- 1 clove of garlic
- Salt as needed
- Pepper as needed
- Extra virgin olive oil as needed
- Fresh basil as needed
- (Optional) 100 g of mozzarella or stracchino for a more stringy version
Preparation
- Preheat the oven to 180 °C.
- Wash and cut the zucchini into rounds or cubes. Sauté the zucchini in a pan with a drizzle of extra virgin olive oil and the whole clove of garlic until slightly golden. Remove the garlic and allow to cool.
- In a bowl, beat the eggs with the heavy cream, add the grated Parmesan, salt and pepper to taste. Once the zucchini is lukewarm, fold it into the egg and cream mixture.
- Roll out the puff pastry in a baking tray lined with parchment paper (you can use some parchment paper on the bottom as well if the tray is not non-stick).
- Pour the zucchini cream over the puff pastry and spread it evenly.
- Cut the cherry tomatoes in half and place them on the surface of the tart with the cut side facing up, pressing them down slightly.
- (Optional) If you wish to add a touch of creaminess, you can add pieces of mozzarella or stracchino on top of the zucchini cream before arranging the cherry tomatoes.
- Bake in the oven for about 25-30 minutes or until the puff pastry is golden and the zucchini cream has set.
- Allow to cool slightly before serving. Garnish with fresh basil for an extra aroma when serving.
