Potato and Speck Puff Pastries

Ingredients

  • 1 roll of rectangular puff pastry
  • 100 g of thinly sliced speck
  • 2 medium-sized potatoes
  • Freshly chopped rosemary (optional)
  • Salt and pepper (to taste)
  • Extra virgin olive oil
  • 1 egg yolk (for brushing)

Preparation

  1. Preheat the oven to 200 °C.
  2. Peel the potatoes and slice them thinly. You can use a mandoline for even slices. Place the potato slices in a bowl, season with a drizzle of oil, chopped rosemary, salt, and pepper, and mix to flavor.
  3. Roll out the puff pastry and cut it into squares or rectangles similar in size to the speck slices.
  4. On each square of puff pastry, place a slice of speck and one or two slices of potato, depending on the size.
  5. Brush the edges of the puff pastry with the beaten egg yolk.
  6. Fold the puff pastry over, sealing the edges well, and also brush the surface with the egg yolk.
  7. Arrange the puff pastries on a baking sheet lined with parchment paper and bake for about 15-20 minutes or until golden and crispy.
  8. Remove the puff pastries from the oven and let them cool on a rack before serving.
