Puff Pastry Leaves with Onion Jam

The puff pastry with onion jam is a dish that combines the sweetness of caramelized onions with the crispiness of puff pastry. Here’s how to prepare it, with an Italian touch perfect for surprising your guests.

Ingredients

  • 1 roll of puff pastry
  • 2 large red onions
  • 2 tablespoons of brown sugar
  • 2 tablespoons of balsamic vinegar
  • 1 bay leaf
  • Salt to taste
  • Extra virgin olive oil
  • 1 egg yolk for brushing (optional)
  • Sesame seeds or poppy seeds for garnish (optional)

Preparation

  1. Start by peeling the onions and slicing them thinly. In a large pan, heat a drizzle of oil and add the onions with the bay leaf. Cook over medium-low heat until the onions are soft and translucent.

  2. Add the brown sugar and balsamic vinegar, then turn up the heat to caramelize the onions, stirring occasionally to prevent sticking. When they have taken on a nice amber color and are well caramelized, adjust salt to taste, remove the bay leaf and turn off the heat. Let it cool.

  3. In the meantime, preheat the oven to 200 °C (392 °F) and roll out the puff pastry on a baking sheet lined with parchment paper. Cut the puff pastry into rectangles of the desired size.

  4. Once cooled, distribute the caramelized onion jam over each puff pastry rectangle, leaving a free edge of about 1 cm.

  5. If you wish, you can brush the edges of the rectangles with beaten egg yolk to give a more golden and shiny appearance to the puff pastry.

  6. If you like, sprinkle some sesame or poppy seeds over the edges of the leaves.

  7. Bake the puff pastry leaves with onion jam for about 15-20 minutes or until the puff pastry is golden and crispy.

  8. Remove from the oven and let cool on a wire rack before serving.

These delicious bites will be great as an appetizer or snack for an aperitif. The sweetness of the caramelized onions blends perfectly with the buttery taste and crumbly texture of the puff pastry.
