Pepper and Gorgonzola Puff Pastries

The pepper and gorgonzola puff pastries are a tasty appetizer or a perfect snack for an aperitif. Here’s how to make them.

Ingredients

  • 1 roll of rectangular puff pastry
  • 1 red bell pepper
  • 150 g of sweet gorgonzola cheese
  • 1 egg yolk
  • Salt, as needed
  • Black pepper, as needed
  • Extra virgin olive oil, as needed

Preparation

  1. Start by washing and cleaning the bell pepper, removing seeds and inner filaments. Cut it into strips or cubes, according to preference.
  2. Heat a drizzle of olive oil in a pan and sauté the bell pepper over medium heat until it softens and begins to slightly char. Season with salt and pepper to taste.
  3. Preheat the oven to 200 °C.
  4. Unroll the puff pastry and cut it into strips or squares, depending on the shape you want to give your puff pastries.
  5. Place some bell pepper and a small amount of gorgonzola, cut into cubes or crumbled, in the center of each piece of puff pastry.
  6. Close the puff pastry over itself to encase the filling, creating small pockets or triangles.
  7. Seal the edges well, perhaps using the tines of a fork to also create a decorative effect.
  8. Arrange the puff pastries on a baking sheet lined with parchment paper, brush the surface with beaten egg yolk to give them a nice golden color.
  9. Bake for about 15-20 minutes or until the puff pastries are golden brown and puffed up.
  10. Remove from the oven and let rest for a couple of minutes before serving.

The pepper and gorgonzola puff pastries are delicious either warm or at room temperature.

Gorgonzola is an Italian DOP cheese that can be of two types: sweet or spicy. For this recipe, we have used sweet gorgonzola, which has a more delicate and creamy flavor, perfect to balance the taste of the peppers.
