Puff Pastry Savories

Puff pastry savories are tasty appetizers that can be easily prepared. They are perfect for a buffet or an aperitif. Here is a classic Italian version of these delicious bites.

Ingredients

  • 1 roll of rectangular puff pastry
  • 150 g of cooked ham
  • 150 g of cheese, such as mozzarella or provola, sliced
  • 1 egg yolk
  • Sesame or poppy seeds (optional)

Preparation

  1. Preheat the oven to 200 °C.
  2. Gently unroll the puff pastry onto a work surface.
  3. Evenly distribute the slices of cooked ham on the puff pastry, leaving a free margin along the edges.
  4. On top of the ham, add a single layer of cheese.
  5. Roll up the puff pastry on itself starting from the long side, making sure to tighten well while rolling.
  6. Once you have a long roll, seal the edges by slightly pressing with your fingers.
  7. Cut the roll into small rounds about 2 cm thick.
  8. Place the rounds on a baking sheet lined with parchment paper, spacing them slightly apart.
  9. Beat the egg yolk and brush it over the surface of the savories.
  10. If desired, sprinkle the savories with sesame or poppy seeds to add crunchiness and flavor.
  11. Bake the savories for about 15-20 minutes, until they become golden and crispy.
  12. Let them cool for a few minutes before serving.

Curiosity

The savories also lend themselves to numerous variations. You can replace the cooked ham with speck, salami, or even smoked salmon if you prefer a stronger and different taste. As for the cheese, feel free to experiment with blue cheeses or more aged ones for a more intense flavor.
