Puff Pastry

Puff pastry is a classic and versatile dough in cooking, loved for its light and crunchy structure. Here’s how you can prepare it:

Ingredients

  • 250 grams of flour
  • 250 grams of cold butter
  • 125 milliliters of cold water
  • 1 teaspoon of salt

Preparation

  1. In a large bowl, sift the flour and add the salt.
  2. Cut the butter into small cubes and add it to the flour. Work everything quickly with the tips of your fingers or use a pastry cutter, until you get a sandy mixture.
  3. Add the cold water a little at a time and mix with a fork, trying not to work the dough too much. When it starts to form a ball, transfer the dough onto a floured surface.
  4. Knead lightly to form a disc, wrap it in plastic wrap and put it in the fridge for at least 1 hour.
  5. After resting, roll out the dough with a rolling pin on a floured surface, maintaining a rectangular shape. Fold it into three parts, covering the central third with the other two parts. Rotate 90 degrees and roll out again into a rectangle. Repeat the folding process 4-6 times, taking the dough to the refrigerator for 30 minutes between each fold.
  6. Once the folding process is completed, the puff pastry is ready to be used in your favorite recipes.

Fun Fact

Puff pastry gets its name from the numerous layers that are created between layers of butter and dough, which puff up during baking creating that classic layered texture. It is important to keep the dough and butter cold during processing, in order to preserve the layers and allow the pastry to rise properly in the oven.
