Puff Pastry Crown with Cream and Peaches

Ingredients

  • 1 roll of rectangular puff pastry
  • 250 ml of custard cream (can be homemade or pre-made)
  • 2-3 fresh peaches (depending on size)
  • 1 egg yolk (for brushing)
  • Powdered sugar (for decorating)
  • A few fresh mint leaves (optional, for decorating)

Preparation

  1. Preheat the oven to 200 °C.
  2. Roll out the puff pastry and cut out a large circle in the center to create a crown shape. You can use an upside-down plate as a guide for the inner circle.
  3. Brush the edge of the crown with the beaten egg yolk.
  4. Transfer the crown onto a baking tray lined with parchment paper and bake in the oven for about 15-20 minutes or until golden brown.
  5. While the puff pastry is baking, wash and slice the peaches into thin slices.
  6. Once the puff pastry is baked and has slightly cooled, carefully spread the custard cream on the inner base of the crown.
  7. Arrange the peach slices on top of the cream in an orderly fashion or creating a spiral design for a more visually pleasing effect.
  8. Dust with powdered sugar and decorate with fresh mint leaves.
