Provençal Style Gratinated Scallops

Here’s the recipe for delicious Provençal style gratinated scallops, with an Italian twist to the breadcrumb coating:

Ingredients

  • 12 fresh scallops with shells
  • 100 g of breadcrumbs
  • 2 cloves of garlic
  • Fresh parsley to taste
  • Zest of 1 untreated lemon
  • 4 tablespoons of extra virgin olive oil
  • Salt to taste
  • Pepper to taste

Preparation

  1. Preheat the oven to 200 °C.
  2. Detach the scallops from the shells and wash them carefully. Clean the shells as well and set them aside.
  3. In a bowl, mix the breadcrumbs with finely chopped garlic, chopped parsley, grated lemon zest, salt, and pepper.
  4. Place the scallops in their shells, drizzle each with a little olive oil and sprinkle with the flavored breadcrumb mixture.
  5. Arrange the shells on a baking tray and cook in the oven for about 10-12 minutes or until the breadcrumbs are golden and crispy.
  6. Serve the scallops hot, perhaps with an additional sprinkle of fresh parsley.

Curiosity

Scallops are highly appreciated in French cuisine, particularly in Provence where they are often served gratinated with herbs and aromas of the region. In Italy, gratinating is often done with the addition of a touch of grated Parmesan or Pecorino, which you might consider adding to the breadcrumb mix for an extra note of flavor.

If you wish, you can pair this dish with a nice glass of white wine, a Pinot Grigio or a Vermentino would be ideal choices.
