Protein Pancakes
17/11/2023Here’s a recipe for protein pancakes, ideal for a snack full of energy or a breakfast that gives you the right charge to face the day. I will add an Italian touch with a suggestion on how to accompany your pancakes.
Ingredients
- 1 ripe banana
- 2 large eggs (or 4 egg whites if you want even more protein and less fat)
- 1/2 cup of oat flour
- 1 scoop of protein powder (flavor of your choice)
- 1/4 cup of milk (you can use almond or soy milk for a lactose-free version)
- 1/2 teaspoon of baking powder
- A pinch of salt
- Coconut oil or butter for cooking
- Optional: cinnamon, vanilla extract or sweetener to taste
Preparation
- Mash the banana with a fork until it becomes a puree.
- In a bowl, beat the eggs (or egg whites) and then add the banana puree.
- Mix in the oat flour, baking powder, salt, and protein powder, stirring until the consistency is smooth.
- Add milk to achieve the desired thickness for the batter. If desired, incorporate cinnamon, vanilla extract, or your preferred sweetener.
- Heat a non-stick pan over medium heat and lightly grease it with coconut oil or butter.
- Pour a small amount of batter onto the hot pan and cook until bubbles form on the surface of the pancake, then flip it and cook on the other side.
- Repeat until all the batter is used up, stacking them on a plate.
An Italian touch could be to serve the pancakes with a drizzle of acacia honey and a sprinkle of chopped hazelnuts, simple and genuine ingredients that will enhance the flavor of your dish.

Pancakes are a very popular recipe in North America, but there are variants of this preparation in many cultures. For example, in Italy we have “crespelle”, which are more similar to the French ones and can be used in both sweet and savory recipes.
