Prosecco Cheesecake

Prosecco cheesecake is a refined and original variant of the classic dessert. Here is how you might prepare it, taking into account the sparkling and slightly fruity character of Prosecco, which, used in moderation, can give the dessert a pleasant aromatic note without overwhelming the rest of the ingredients.

Ingredients

  • 250 g of dry biscuits (such as Digestives or similar)
  • 100 g of melted butter
  • 500 g of cream cheese (like Philadelphia)
  • 100 g of powdered sugar
  • 200 ml of fresh cream
  • 10 g of sheet gelatin (fish glue)
  • 100 ml of Prosecco
  • 1 sachet of vanillin or a teaspoon of vanilla extract
  • Grated zest of 1 lemon (optional for a touch of freshness)
  • Fresh berries for decoration (such as strawberries, blackberries, or blueberries)

Preparation

  1. Begin by finely crushing the biscuits to obtain a crunchy base and mix them with the melted butter. Press the mixture into the bottom of a springform pan to form the base of the cheesecake and let it rest in the refrigerator for at least 30 minutes.
  2. Soak the sheet gelatin in cold water for about 10 minutes.
  3. In a bowl, mix the cream cheese with the powdered sugar and vanillin (or vanilla extract) until you get a smooth and homogeneous mixture; if you wish, also add the lemon zest.
  4. Heat the Prosecco in a saucepan without bringing it to a boil and dissolve the well-squeezed gelatin in it, stirring until completely absorbed.
  5. Pour the Prosecco into the cream cheese mixture and gently fold it in.
  6. Whip the cream and fold it into the mixture with gentle movements from bottom to top to avoid deflating it.
  7. Pour the filling over the cooled biscuit base and let the cheesecake rest in the refrigerator for at least 4 hours, or until it has solidified.
  8. Decorate with fresh berries before serving.
