Ingredients
- 250 g of all-purpose flour
- 100 g of Robiola cheese
- 150 g of fresh or frozen peas
- 100 g of cooked ham, diced
- 3 eggs
- 100 ml of milk
- 80 ml of extra virgin olive oil
- 1 packet of instant yeast for savory preparations
- Salt to taste
- Pepper to taste
- Butter and flour for the mold
Preparation
- Preheat the oven to 180 °C.
- In the meantime, cook the peas in boiling salted water for about 5-7 minutes if fresh, or according to package instructions if frozen. Once cooked, drain and let them cool.
- Take a sufficiently large bowl and start whisking the eggs with a whisk, then adding salt, pepper, and Robiola cheese. Work the mixture until it is smooth and even.
- Incorporate the oil and milk into the Robiola cream and continue mixing. Then, add the sifted flour and yeast, blending everything to avoid lumps.
- Add the now tepid peas and diced cooked ham to the mixture, stirring gently to distribute them evenly.
- Prepare a ring mold by greasing it with butter and dusting with a bit of flour. Remove the excess flour by turning the mold upside down and tapping lightly.
- Pour the mixture into the mold and level the surface with a spatula or spoon.
- Bake the ring cake in the preheated oven for about 30-35 minutes, or until it turns golden and a toothpick inserted in the center comes out clean.
