Savory Profiterole

Savory profiteroles are a tasty variation of the traditional sweet profiteroles. They can be filled with a savory cheese cream or a fish or meat mousse. Here I propose a version with a cheese cream. Here is the recipe:

Ingredients

  • 150 ml of water
  • 50 g of butter
  • A pinch of salt
  • 100 g of flour
  • 3 medium eggs
  • 200 g of creamy cheese (such as Philadelphia or robiola)
  • Chopped chives (to taste)
  • Salt and pepper as needed

Preparation

  1. Start by preparing the choux pastry: in a pot, put the water, the butter cut into pieces, and a pinch of salt. Bring to a boil.
  2. When the butter has melted, remove the pot from the heat and add all the flour at once, mixing vigorously with a wooden spoon until a homogeneous dough is obtained.
  3. Put the pot back on the heat and, continuing to stir, cook the dough for a few minutes until it detaches from the sides of the pot.
  4. Remove the dough from the heat and let it cool. Then add the eggs, one at a time, incorporating them completely before adding the next one.
  5. Prepare a baking tray by covering it with parchment paper and preheat the oven to 200°C.
  6. Transfer the dough into a piping bag with a smooth nozzle and form small heaps on the tray, spacing them apart.
  7. Bake in the oven for about 20-25 minutes or until the puffs are puffed and golden. Do not open the oven during cooking to prevent them from deflating.
  8. In the meantime, prepare the savory cream by mixing the creamy cheese with the chopped chives, salt, and pepper to taste.
  9. Once baked, let the puffs cool on a wire rack.
  10. When they are cold, fill them with the cheese cream using a piping bag with a pointed nozzle.
  11. Serve the savory profiteroles as an appetizer or for a buffet.
