Ingredients
- 12 large fresh prawns
- Salt and pepper to taste
- Juice of 1 lemon
- 1 clove garlic
- Extra virgin olive oil to taste
- Breadcrumbs to taste
- Chopped fresh parsley to taste
- 00 flour to taste
- 2 eggs
Preparation
- Clean the prawns by removing the shell, leaving the tail attached, and removing the black intestinal thread. Gently rinse under running water.
- Dry the prawns with kitchen paper and arrange them on a plate. Marinate them with a pinch of salt, pepper, lemon juice, and a drizzle of extra virgin olive oil for about 10-15 minutes.
- Meanwhile, prepare the breading by mixing in a bowl the breadcrumbs with chopped fresh parsley, a crushed garlic clove, and a pinch of salt.
- Beat the eggs in another bowl and prepare a plate with some flour.
- Coat the prawns first in the flour, then in the beaten eggs and finally in the aromatic breadcrumbs, pressing well to make everything adhere.
- Heat a pan with a bottom of extra virgin olive oil, and when it is hot, fry the prawns until they become golden and crispy, being careful not to overcook them to avoid making them rubbery.
- Drain them on paper towels to remove excess oil and serve immediately with lemon wedges on the side.
