Shrimp Frittata

Ingredients
- 400 g of cleaned shrimp
- 6 eggs
- 2 tablespoons of grated Parmesan cheese
- Chopped parsley to taste
- 1 clove of garlic
- Extra virgin olive oil to taste
- Salt to taste
- Pepper to taste

Begin by heating a drizzle of extra virgin olive oil in a non-stick pan along with the garlic clove. Sauté the garlic until it becomes golden brown and then remove it from the pan.

Add the shrimp to the pan and sauté for about 3-4 minutes, until they turn pink and slightly golden. At this point, sprinkle them with chopped parsley, slightly salt them, and add pepper to taste. Mix well and remove the shrimp from the heat.

In a bowl, beat the eggs with the grated Parmesan cheese, a pinch of salt, and a pinch of pepper, until you have a homogeneous mixture.

Put the pan back on the heat and pour the egg mixture over the shrimp, spreading the mixture evenly.

Cook the frittata over medium-low heat, without stirring, until the egg begins to set around the edges. With the help of a lid or a plate, flip the frittata and cook on the other side until it is well browned and cooked through in the center.

Once ready, the shrimp frittata can be served either hot or at room temperature, perhaps accompanied by a fresh salad or seasonal vegetables.
