Potatoes stuffed with salmon

Here is the recipe for delicious potatoes stuffed with salmon, with a very Italian twist.

Ingredients

  • 4 large potatoes
  • 200 g smoked salmon
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Fresh chopped parsley to taste
  • 2 tablespoons of creamy cheese (such as Philadelphia or stracchino)
  • Juice of 1/2 lemon
  • Grated zest of 1/2 lemon
  • 1 clove of garlic (optional)
  • Salted capers (optional, rinsed and chopped)
  • Chopped chives for garnish (optional)

Preparation

  1. Pre-heat the oven to 200 °C.
  2. Wash and dry the potatoes, then pierce them several times with a fork.
  3. Place the potatoes on a baking sheet lined with parchment paper and season with olive oil, salt, and a little pepper. Bake for about 60 minutes or until soft and cooked through.
  4. Once cooked, cut each potato in half lengthwise, and carefully scoop out the inner flesh leaving a thin layer of potato attached to the skin to maintain the shape.
  5. Mash the extracted potato flesh in a bowl and add the creamy cheese, chopped parsley, salt, pepper, the juice and zest of lemon. If you like, you can also add a crushed garlic clove and chopped capers for an extra burst of flavor.
  6. Cut the smoked salmon into not-too-fine strips and fold it into the potato mixture. Adjust for salt and pepper if necessary.
  7. Stuff each potato shell with the mixture and bake again for 10-15 minutes until the surface is lightly colored.
  8. Serve hot, garnishing with chopped chives for an added touch of freshness.
