Potato, Zucchini and Sausage Flan

The potato, zucchini, and sausage flan is a rich and flavorful dish, perfect as a complete meal or as a unique dish for a family lunch. Here is the recipe with an Italian touch:

Ingredients

  • 500 g of potatoes
  • 2 medium zucchinis
  • 300 g of sausage
  • 100 g of grated cheese (parmesan or pecorino)
  • 2 eggs
  • 100 ml of cream
  • Salt and pepper to taste
  • Extra virgin olive oil to taste
  • Butter for greasing the baking dish
  • Breadcrumbs to taste

Preparation

  1. Begin by preheating the oven to 180°C.
  2. Peel the potatoes and cut them into cubes, then boil them in salted water until tender, and mash them with a potato masher or a fork to obtain a puree.
  3. Meanwhile, wash and cut the zucchinis into thin slices and cook them in a pan with a drizzle of oil and a pinch of salt until they are soft.
  4. Remove the sausage casing, crumble it, and brown it in a pan without adding fats until it is well cooked.
  5. In a large bowl, mix the mashed potatoes with the eggs, cream, and grated cheese. Season with salt and pepper.
  6. Incorporate the zucchinis and the cooked sausage into the potato mixture, stirring carefully to evenly distribute the ingredients.
  7. Grease a baking dish (or baking mold) with butter and sprinkle the bottom and sides with breadcrumbs.
  8. Pour the mixture into the mold, level it with a spatula, and sprinkle the surface with more grated cheese if you desire a golden crust.
  9. Bake the flan for about 40 minutes or until the surface is well browned and crispy.
  10. Let it cool for a few minutes before serving.

“Sformato” comes from the French “soufflé” and indicates a preparation that is baked in a mold from which it is then removed and served. It is a versatile dish that you can enrich or modify according to your tastes or the availability of ingredients you have at home!
