17/11/2023The potato, zucchini, and sausage flan is a rich and flavorful dish, perfect as a complete meal or as a unique dish for a family lunch. Here is the recipe with an Italian touch:
Ingredients
- 500 g of potatoes
- 2 medium zucchinis
- 300 g of sausage
- 100 g of grated cheese (parmesan or pecorino)
- 2 eggs
- 100 ml of cream
- Salt and pepper to taste
- Extra virgin olive oil to taste
- Butter for greasing the baking dish
- Breadcrumbs to taste
Preparation
- Begin by preheating the oven to 180°C.
- Peel the potatoes and cut them into cubes, then boil them in salted water until tender, and mash them with a potato masher or a fork to obtain a puree.
- Meanwhile, wash and cut the zucchinis into thin slices and cook them in a pan with a drizzle of oil and a pinch of salt until they are soft.
- Remove the sausage casing, crumble it, and brown it in a pan without adding fats until it is well cooked.
- In a large bowl, mix the mashed potatoes with the eggs, cream, and grated cheese. Season with salt and pepper.
- Incorporate the zucchinis and the cooked sausage into the potato mixture, stirring carefully to evenly distribute the ingredients.
- Grease a baking dish (or baking mold) with butter and sprinkle the bottom and sides with breadcrumbs.
- Pour the mixture into the mold, level it with a spatula, and sprinkle the surface with more grated cheese if you desire a golden crust.
- Bake the flan for about 40 minutes or until the surface is well browned and crispy.
- Let it cool for a few minutes before serving.
Trivia
