Potato Velouté
17/11/2023Potato velouté is a comfortable and warm dish, perfect for cold days or as comfort food at any time of the year. Here is the recipe:
Ingredients
- 500 g of potatoes
- 1 white onion
- 1 lt of vegetable broth
- 2 tablespoons of extra virgin olive oil
- Salt to taste
- Pepper to taste
- Chopped parsley or chives for garnish (optional)
- Fresh cream or milk for finishing (optional)
Preparation
-
Start by peeling the potatoes and cutting them into cubes. Also, peel the onion and chop it finely.
-
In a large pot, heat the extra virgin olive oil and add the chopped onion. Sauté over medium heat until the onion becomes transparent and soft, but without browning.
-
Add the potato cubes to the pot and stir well to flavor them with the onion sauté.
-
Pour the vegetable broth in until it covers the potatoes. Increase the heat and bring to a boil, then lower the heat and let it simmer with the lid on for about 20-30 minutes, or until the potatoes are soft.
-
At this point, use an immersion blender to blend the potatoes into a smooth and homogeneous cream. If you prefer a lighter texture, you can add a little more broth.
-
Taste and adjust the salt and pepper according to your taste.
-
If you want, you can add a touch of cream or milk to make the velouté even creamier and richer.
-
Serve hot, garnishing with chopped aromatic herbs and a drizzle of raw extra virgin olive oil.
