Potato Velouté

Ingredients

  • 500 g of potatoes
  • 1 white onion
  • 1 lt of vegetable broth
  • 2 tablespoons of extra virgin olive oil
  • Salt to taste
  • Pepper to taste
  • Chopped parsley or chives for garnish (optional)
  • Fresh cream or milk for finishing (optional)

Preparation

  1. Start by peeling the potatoes and cutting them into cubes. Also, peel the onion and chop it finely.

  2. In a large pot, heat the extra virgin olive oil and add the chopped onion. Sauté over medium heat until the onion becomes transparent and soft, but without browning.

  3. Add the potato cubes to the pot and stir well to flavor them with the onion sauté.

  4. Pour the vegetable broth in until it covers the potatoes. Increase the heat and bring to a boil, then lower the heat and let it simmer with the lid on for about 20-30 minutes, or until the potatoes are soft.

  5. At this point, use an immersion blender to blend the potatoes into a smooth and homogeneous cream. If you prefer a lighter texture, you can add a little more broth.

  6. Taste and adjust the salt and pepper according to your taste.

  7. If you want, you can add a touch of cream or milk to make the velouté even creamier and richer.

  8. Serve hot, garnishing with chopped aromatic herbs and a drizzle of raw extra virgin olive oil.
