Potato morsels with taleggio, mushrooms, and sausage

Ingredients
- 500 g of potato morsels (small gnocchi)
- 300 g of mixed mushrooms (fresh or frozen)
- 200 g of taleggio cheese
- 200 g of sausage
- 1 clove of garlic
- Extra virgin olive oil
- Salt and pepper to taste
- Chopped parsley (optional)
- Butter (optional)
- Grated Parmesan cheese (optional)
Preparation

If using fresh mushrooms, clean them and cut them into not-too-small pieces. If using frozen mushrooms, let them defrost completely and then proceed as with fresh ones.

In a wide frying pan, sauté the garlic clove in extra virgin olive oil (you can remove it after a few minutes if you prefer a less intense flavor).

Add the mushrooms to the pan and let them cook until they have lost all their vegetation water and are golden. Season with salt and pepper to taste.

Meanwhile, cook the sausage in another frying pan. Remove the casing and crumble it with a fork while cooking.

Once the mushrooms are ready, add the cooked sausage and let everything flavor for a few minutes over medium heat, stirring occasionally.

Boil the potato morsels in plenty of salted water according to the package directions, usually they are ready when they float to the surface.

Drain the morsels and transfer them to the pan with the mushroom and sausage seasoning. Gently mix to flavor the gnocchi.

Cut the taleggio into cubes and add it to the still-hot morsels in the pan (if you prefer a creamier texture, you can melt it with a bit of butter separately and then pour it over the dish).

Mix until the cheese starts to melt and blend with the other ingredients.

Serve hot, sprinkling with fresh chopped parsley and, if desired, with a dusting of grated Parmesan cheese.
