Potato, Speck, and Brie Tart

Ingredients
- 800 g of potatoes
- 150 g of Brie
- 100 g of speck in slices
- 2 eggs
- 50 g of grated Parmesan cheese
- Salt to taste
- Pepper to taste
- Nutmeg to taste
- Butter for greasing the pan
- Breadcrumbs for the pan
Preparation
- Start by peeling the potatoes and then boil them in salted water until they are soft. Once cooked, drain them and let them cool down slightly.
- Mash the potatoes with a potato masher or a fork until you have a puree. Allow to cool.
- Add to the mashed potatoes the eggs, grated Parmesan cheese, a pinch of salt, pepper, and grated nutmeg. Mix well to obtain a homogeneous mixture.
- Cut the Brie into small pieces or thin slices.
- Take a baking mold (or more molds if you want to make individual portions) and grease the bottom and sides with butter, then sprinkle with breadcrumbs.
- Spread a layer of puree on the bottom of the mold, add a layer of speck and then one of Brie.
- Cover with another layer of puree, making sure to seal the edges well.
- Sprinkle the tart with breadcrumbs and a few flakes of butter on the surface to get a golden gratin.
- Bake in a preheated oven at 200 °C for about 20-25 minutes, until the surface becomes golden and crispy.
- Let it rest for a few minutes before unmolding and serving.
