Ingredients
- 500 grams of potatoes
- 1 onion
- 1 stalk of celery
- 1 carrot
- 1 liter of vegetable broth
- Salt and pepper to taste
- Extra virgin olive oil
- Chopped parsley (optional)
- Grated Parmesan cheese (optional)
Preparation
- Start by peeling the potatoes and cutting them into cubes.
- Clean and finely slice the onion, carrot, and celery.
- In a large pot, sauté the onion in a drizzle of extra virgin olive oil until it becomes translucent.
- Add the carrot and celery to the sauté and let cook for a few minutes.
- Add the potato cubes and mix well.
- Pour the vegetable broth into the pot and bring to a boil.
- Reduce the heat, cover the pot with a lid, and let cook for about 20-30 minutes or until the potatoes are tender.
- Use an immersion blender to blend part of the potatoes directly in the pot to thicken the soup, leaving some chunks for a more rustic texture.
- Taste and adjust salt and pepper according to your taste.
- If you like, you can add chopped parsley and grated Parmesan cheese when serving to enhance the flavor.
This soup can be customized in many ways: for example, for a heartier variant you can add cubed smoked bacon and sauté it with the soffritto. Enjoy your meal!
