Potato Soup

Potato soup is a comforting and simple-to-prepare dish. Here’s a recipe for making a tasty Italian-style potato soup.

Ingredients

  • 500 grams of potatoes
  • 1 onion
  • 1 stalk of celery
  • 1 carrot
  • 1 liter of vegetable broth
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Chopped parsley (optional)
  • Grated Parmesan cheese (optional)

Preparation

  1. Start by peeling the potatoes and cutting them into cubes.
  2. Clean and finely slice the onion, carrot, and celery.
  3. In a large pot, sauté the onion in a drizzle of extra virgin olive oil until it becomes translucent.
  4. Add the carrot and celery to the sauté and let cook for a few minutes.
  5. Add the potato cubes and mix well.
  6. Pour the vegetable broth into the pot and bring to a boil.
  7. Reduce the heat, cover the pot with a lid, and let cook for about 20-30 minutes or until the potatoes are tender.
  8. Use an immersion blender to blend part of the potatoes directly in the pot to thicken the soup, leaving some chunks for a more rustic texture.
  9. Taste and adjust salt and pepper according to your taste.
  10. If you like, you can add chopped parsley and grated Parmesan cheese when serving to enhance the flavor.

This soup can be customized in many ways: for example, for a heartier variant you can add cubed smoked bacon and sauté it with the soffritto. Enjoy your meal!
