Potato Skewers with Melty Heart
17/11/2023Potato skewers with a melty heart are a delicious snack that’s perfect for an aperitif or as a rich side dish. Here’s how to prepare them.
Ingredients
- 8 medium potatoes
- 200 g of melting cheese (for example, mozzarella)
- 2 eggs
- 100 g of breadcrumbs
- 30 g of grated cheese (Parmesan or pecorino)
- Salt and pepper, to taste
- Herbs to taste (oregano, thyme, rosemary)
- Oil for frying
Preparation

Wash the potatoes thoroughly, then boil them in salted water until they are tender but still firm. Check doneness by inserting a fork into the potatoes; if it enters without resistance, they are ready.

Drain the potatoes and allow them to cool, then peel them and cut them into cubes about 3 cm on each side.

Also cut the melting cheese into cubes, slightly smaller than the potatoes.

Take a potato cube and, gently, create a hollow in the center with your finger. Insert a cube of melting cheese into the hollow, then cover the opening with a small piece of potato so that the cheese is completely sealed inside.

Proceed in the same way with all the potato and cheese cubes.

In a bowl, beat the eggs with salt, pepper, and chopped aromatic herbs.

Dip the skewers first in the beaten egg and then in the breadcrumbs mixed with the grated cheese, making sure they are well covered.

Prepare a pan with plenty of oil for frying and heat to temperature (about 180 °C).

Fry the potato skewers until they are golden on all sides.

Drain the skewers on paper towels to remove excess oil.

Serve the hot potato skewers, so you can enjoy the melty heart at the moment of the bite.
