Potato Roll Stuffed with Provola

The potato roll stuffed with provola is a tasty dish that can be served both as a tempting appetizer and as a hearty second course. Here’s how to prepare it.

Ingredients

  • 800 g of potatoes
  • 2 eggs
  • 100 g of grated Parmesan cheese
  • Salt and pepper to taste
  • Nutmeg to taste (optional)
  • 200 g of smoked provola cheese
  • 150 g of cooked ham (optional)
  • Breadcrumbs as needed
  • Butter as needed
  • Extra-virgin olive oil as needed

Preparation

  1. Start by boiling the potatoes in plenty of salted water until they are well cooked. Drain the potatoes, let them cool down a bit, peel them, and mash them with a potato masher, collecting the purée in a bowl.
  2. Add the eggs, grated Parmesan cheese, salt, pepper, and if you like, a bit of nutmeg to the potato purée. Mix well to obtain a homogeneous mixture.
  3. Spread the potato mixture on a sheet of parchment paper, forming a rectangle about 1 cm thick, trying to maintain the shape as regular as possible.
  4. Cut the smoked provola into thin slices and lay them on the potato layer, leaving a margin along the edges. If you want to add an extra touch of flavor, you can also add slices of cooked ham on top of the provola.
  5. With the help of the parchment paper, gently roll up the potato rectangle on itself, sealing the provola and ham filling inside the roll.
  6. Brush the surface of the roll with a little melted butter (or with extra-virgin olive oil), and sprinkle it with breadcrumbs to form a golden crust during cooking.
  7. Bake in a preheated oven at 180 °C for about 30 minutes or until the surface is golden brown and crispy.

Serve the potato roll while still hot, slicing it to show the stringy provola filling. It’s a dish that always makes a good impression on the table and can also be prepared in advance.
