Potato Roll

The potato roll is a versatile and tasty dish that can be served either as an appetizer or as a side dish. Here’s an Italian version of the classic potato roll:

Ingredients

  • 1 kg of potatoes
  • 100 g of grated Parmesan cheese
  • 2 eggs
  • Nutmeg to taste
  • Salt and pepper to taste
  • 150 g of cooked ham slices
  • 150 g of provola or smoked scamorza cheese slices
  • Breadcrumbs (optional)
  • Butter to taste for greasing

Preparation

  1. Begin by peeling the potatoes and boiling them in salted water until they are soft.
  2. Once cooked, mash them to obtain a puree. Add the eggs, grated Parmesan cheese, a sprinkle of nutmeg, salt, and pepper. Mix well until you have a homogeneous mixture.
  3. Take a sheet of parchment paper and spread a light layer of breadcrumbs on it, if you desire a crunchier crust.
  4. Spread the potato mixture onto the parchment paper, forming a rectangle about 1 cm thick.
  5. Evenly distribute the slices of cooked ham and cheese over the potatoes.
  6. Using the parchment paper, gently roll up the potato mixture on itself, starting from one long side, to form a roll.
  7. Seal the roll well and transfer it onto a baking tray previously greased with a little butter.
  8. Bake in a preheated oven at 180 °C for about 20-30 minutes, or until the roll has a nice golden crust on the outside.
  9. Allow it to cool for a few minutes before cutting it into slices and serving.

Curiosity

The potato roll is an excellent base for customization: instead of cooked ham and cheese, you can use grilled vegetables, previously cooked minced meat, or even smoked salmon for a more refined variant. Additionally, the potato roll can be enriched with aromatic herbs such as rosemary or thyme for an extra touch of flavor.
