Potato Quiche with Ham and Cherry Tomatoes

Ingredients

  • 1 roll of brisée dough (or puff pastry if you prefer a crunchier base)
  • 2 medium potatoes
  • 150 g of cooked ham cut into cubes or strips
  • 200 g of cherry tomatoes
  • 3 eggs
  • 200 ml of fresh cream
  • 100 g of grated cheese (Parmesan or pecorino for a more Italian touch)
  • Salt and pepper to taste
  • Extra virgin olive oil

Preparation

  1. Preheat the oven to 180 °C.
  2. Wash your hands well and start peeling the potatoes, then cut them into small cubes and boil them in salted water until they are soft but not mushy.
  3. In the meantime, roll out the brisée dough in a previously oiled quiche pan, pricking the bottom with a fork to avoid it puffing up during baking.
  4. When the potatoes are ready, drain them and let them cool. Spread them on the bottom of the brisée crust along with the cubes of cooked ham.
  5. Cut the cherry tomatoes in half and place them on top of the potatoes and ham.
  6. Beat the eggs in a bowl, add the cream, grated cheese, salt, pepper and, if you wish, a pinch of nutmeg. Mix well to obtain a homogeneous mixture.
  7. Pour the egg, cream, and cheese mixture over the potatoes, ham, and cherry tomato base, making sure to cover everything evenly.
  8. Bake the quiche for about 30-35 minutes or until the surface is golden and the pastry is cooked.
  9. Let it cool for a few minutes before serving. Garnish with fresh basil leaves to add a touch of color and freshness.
