Jam Sbriciolata

The jam sbriciolata is a tasty variant of the classic crumble or pasticciotto. Its preparation is quite simple and the result is always appreciated for its crispy exterior and the sweetness of the jam filling. Here is how to prepare it:

Ingredients

  • 300 g of all-purpose flour
  • 200 g of cold butter
  • 100 g of sugar
  • 1 egg + 1 egg yolk
  • 1 pinch of salt
  • 1 teaspoon of baking powder
  • Grated zest of 1 lemon (optional)
  • About 300 g of jam of your choice (apricot, strawberry, blueberry, etc.)

Preparation

  1. In a large bowl, mix the flour with the sugar, baking powder, salt, and grated lemon zest to flavor.
  2. Add the cold butter cut into cubes and start to work the dough with your fingertips to obtain a sandy mixture.
  3. Incorporate the egg and yolk and mix until they are completely absorbed, still obtaining a crumbly dough.
  4. Take a baking pan (usually a springform pan with a diameter of about 24 cm), line it with parchment paper and pour half of the crumbled dough, pressing it lightly with your hands to create a uniform layer.
  5. Spread the chosen jam on this first layer, leaving about half a centimeter from the edge to prevent it from spilling out during cooking.
  6. Cover the jam with the remaining crumbled dough, without pressing too hard.
  7. Bake in a pre-heated oven at 180 °C for about 30-35 minutes or until the surface is golden and crispy.
  8. Let the sbriciolata cool before removing it from the pan. Serve at room temperature, possibly with a dusting of powdered sugar.

You can play with the flavors, adding vanilla, cinnamon, or other citrus zest to the dough, depending on the jam used and personal taste.

The sbriciolata, as the name itself suggests, is characterized by its friable and “crumbly” texture. Originally from Northern Italy, particularly Lombardy, the sbriciolata is often confused with the English crumble or the American apple pie, but it differs due to the presence among the ingredients of egg and baking powder, making it a variant closer to the world of biscuits rather than the purely buttery baked sweets like crumble.
