Potato Muffins

Potato muffins are a tasty and unusual variation of classic muffins. Here’s a version enriched with an Italian touch.

Ingredients

  • 300 g of potatoes
  • 100 g of flour
  • 2 eggs
  • 80 g of grated Parmesan
  • 100 ml of milk
  • 50 g of melted butter
  • 1 teaspoon of baking powder for savory cakes
  • Salt and pepper to taste
  • Finely chopped herbs of choice (for example, rosemary or thyme)
  • 100 g of diced cooked ham (optional for a more Italian touch)

Preparation

  1. Preheat the oven to 180 °C.
  2. Boil the potatoes until they are soft, then mash them with a potato masher to obtain a smooth puree.
  3. In a bowl, mix the flour with the baking powder.
  4. Add the eggs to the potato puree and mix well.
  5. Incorporate into the potato mixture the flour with baking powder, Parmesan, melted butter, and milk. Blend everything until you get a uniform mixture.
  6. Season with salt, pepper, and the chopped herbs.
  7. Add the diced cooked ham to give a stronger flavor and a typically Italian touch.
  8. Butter and flour the muffin molds or use paper liners and fill them to 3/4 of their capacity with the mixture.
  9. Bake the potato muffins for about 20-25 minutes or until the surface is golden and a toothpick inserted in the center comes out clean.
  10. Let the muffins cool before serving.
