Ingredients

  • 1 kg of potatoes
  • 100 g of butter
  • 100 g of grated Parmesan cheese

Preparation

  1. Preheat the oven to 180 °C.
  2. Peel the potatoes and slice them into very thin slices, possibly with a mandoline for an even thickness.
  3. Melt the butter and set it aside.
  4. In a bowl, mix the Parmesan with salt, pepper, and grated nutmeg to taste.
  5. In a springform pan, start assembling your mille-feuille cake by laying down a slightly overlapping layer of potatoes.
  6. Brush each layer of potatoes lightly with the melted butter and sprinkle with the Parmesan and spice mixture.
  7. Continue to overlay layers of potatoes, butter, and Parmesan until all the ingredients are used up.

  9. Press down gently on the surface of the cake with your hands or the bottom of a plate to compact the layers well.
  10. Bake in the oven for about 60-70 minutes, or until the potatoes are golden and cooked through.
  11. Let it rest for about 10 minutes before unmolding and serving.
