Potato Meatballs
17/11/2023Potato meatballs are a delicious and easy-to-prepare dish. Here is a version with an Italian twist for you:
Ingredients
- 500 g of potatoes
- 1 egg (large)
- 60 g of grated Parmesan cheese
- 2 tablespoons of finely chopped fresh parsley
- Salt and pepper to taste
- Breadcrumbs (about 100 g for the mixture and extra for breading)
- Oil for frying
Preparation
- Start by boiling the potatoes until they are soft, then peel them and mash them with a potato masher or a fork until you get a smooth puree.
- Let the potato puree cool down a bit and then add the egg, Parmesan, chopped parsley, salt, and pepper. Mix well until you obtain a homogenous mixture.
- Add enough breadcrumbs to make the mixture moldable. If it’s too sticky, add more breadcrumbs gradually.
- Form balls with the mixture, and then roll them in the extra breadcrumbs to coat them well.
- Heat the oil in a frying pan and, when it’s hot, fry the meatballs until they are golden and crispy on all sides.
- Drain them on paper towels to remove the excess oil.
- Serve hot, possibly with a sauce of your choice to accompany.
