Potato Meatballs

Potato meatballs are a delicious and easy-to-prepare dish. Here is a version with an Italian twist for you:

Ingredients

  • 500 g of potatoes
  • 1 egg (large)
  • 60 g of grated Parmesan cheese
  • 2 tablespoons of finely chopped fresh parsley
  • Salt and pepper to taste
  • Breadcrumbs (about 100 g for the mixture and extra for breading)
  • Oil for frying

Preparation

  1. Start by boiling the potatoes until they are soft, then peel them and mash them with a potato masher or a fork until you get a smooth puree.
  2. Let the potato puree cool down a bit and then add the egg, Parmesan, chopped parsley, salt, and pepper. Mix well until you obtain a homogenous mixture.
  3. Add enough breadcrumbs to make the mixture moldable. If it’s too sticky, add more breadcrumbs gradually.
  4. Form balls with the mixture, and then roll them in the extra breadcrumbs to coat them well.
  5. Heat the oil in a frying pan and, when it’s hot, fry the meatballs until they are golden and crispy on all sides.
  6. Drain them on paper towels to remove the excess oil.
  7. Serve hot, possibly with a sauce of your choice to accompany.
