Potato Gnocchi with Gorgonzola and Walnuts

Ingredients

Preparation

  1. Begin by cooking the potatoes. Wash the potatoes and cook them whole and with the skin in salted boiling water until they are soft. Then drain them, peel them while they are still hot, and pass them through a potato ricer.
  2. Allow the mashed potatoes to cool slightly, then add a pinch of salt, the egg, and begin to incorporate the flour a little at a time, kneading until you get a smooth and not too sticky mixture. You may not need all the flour, so add it gradually.
  3. Cut the dough into pieces and form “snakes” about 1.5 cm thick on the floured work surface. Cut into pieces of about 2 cm and, if you wish, roll each gnocco on a fork or a gnocchi board to give it the characteristic ridged shape.
  4. Cook the gnocchi in salted boiling water. When they rise to the surface, they are ready, remove them with a slotted spoon and let them drain.
  5. For the sauce, melt the gorgonzola cheese into pieces with the cream in a small pan over low heat until you get a smooth sauce. Adjust with pepper.
  6. Add the cooked gnocchi directly into the pan with the gorgonzola sauce and gently stir to coat them with the sauce.
  7. Plate the gnocchi and sprinkle with the chopped walnuts and, if liked, a bit of grated Parmesan cheese.
