Potato Focaccia
17/11/2023Potato focaccia is a very tasty variant of the classic Genoese focaccia. It’s soft and flavorful, perfect as a side dish or as a snack. Here is the recipe:
Ingredients
- 500g of potatoes
- 500g of all-purpose flour
- 200ml of lukewarm water
- 25g of fresh yeast or 7g of dry brewer’s yeast
- 10g of sugar
- 10g of fine salt
- 50ml of extra virgin olive oil
- Chopped rosemary (optional)
- Coarse salt to garnish
- Additional extra virgin olive oil for brushing
Preparation
- Boil the potatoes, peel them and pass them through a potato ricer. Let them cool down.
- Dissolve the yeast and sugar in the lukewarm water. Let it rest for a few minutes until foam starts forming on the surface.
- Pour the flour on a work surface or in a large bowl and make a well. Add the mashed potatoes, oil, and the water and yeast mixture to the center.
- Start kneading slowly, incorporating the flour from the edges towards the center. Once the dough starts to form, add the salt.
- Transfer the dough onto a lightly floured surface and work it until you get a smooth and even consistency.
- Place the dough in a bowl greased with a little oil and cover with a damp cloth. Let it rise in a warm place for about 1-2 hours, or until it doubles in volume.
- After rising, gently stretch the dough on an oiled baking pan to form a focaccia about 2cm high.
- Let the focaccia rise on the pan for another 30 minutes.
- Preheat the oven to 200°C.
- After the second rise, create dimples on the surface of the focaccia with your fingers, brush it with extra virgin olive oil, and sprinkle with coarse salt and chopped rosemary if you wish.
- Bake in the oven for about 20-25 minutes or until the focaccia turns golden.
- Once baked, remove it from the oven and let it cool on a wire rack.
You can serve the potato focaccia warm or lukewarm, it’s delicious as it is or paired with cheeses and cold cuts for an Italian-style aperitif.
