Sweet and Sour Potato and Vegetable Flan

Preparation

  1. Start by cooking the potatoes in salted water until they are soft, then drain them, peel them, and mash them into a purée.
  2. In the meantime, dice the zucchini, carrot, and small onion very small and stew them in a pan with a drizzle of oil and a pinch of salt until they are slightly golden.
  3. Add the peas to the vegetable sauté and cook for a few minutes.
  4. In a large bowl, combine the vegetables with the potato purée. Season with salt and pepper.
  5. Incorporate the beaten eggs and milk into the potato and vegetable mixture.
  6. Add the grated cheese and mix until you have a homogeneous mixture.
  7. Prepare small greased baking molds and fill them with the mixture. Bake in a pre-heated oven at 180 °C for about 20-30 minutes until the flans are golden.
