Sweet and Sour Potato and Vegetable Flan

Ingredients
- 500 g of potatoes
- 1 zucchini
- 1 carrot
- 1 small onion
- 100 g of peas (fresh or frozen)
- 2 eggs
- 100 ml of milk
- 50 g of grated cheese (Parmesan or Pecorino Romano)
- Salt and pepper to taste
- Extra virgin olive oil
For the sweet and sour
- 1 red bell pepper
- 1 yellow bell pepper
- 1 red onion
- Balsamic vinegar
- Sugar
- Salt
- Extra virgin olive oil
Preparation
- Start by cooking the potatoes in salted water until they are soft, then drain them, peel them, and mash them into a purée.
- In the meantime, dice the zucchini, carrot, and small onion very small and stew them in a pan with a drizzle of oil and a pinch of salt until they are slightly golden.
- Add the peas to the vegetable sauté and cook for a few minutes.
- In a large bowl, combine the vegetables with the potato purée. Season with salt and pepper.
- Incorporate the beaten eggs and milk into the potato and vegetable mixture.
- Add the grated cheese and mix until you have a homogeneous mixture.
- Prepare small greased baking molds and fill them with the mixture. Bake in a pre-heated oven at 180 °C for about 20-30 minutes until the flans are golden.
- Meanwhile, prepare the sweet and sour vegetables. Cut the bell peppers and red onion into strips.
- In a pan, fry the onion with oil until it becomes transparent, then add the bell peppers and cook for about 10 minutes.
- Add a pinch of salt, a tablespoon of sugar, and a splash of balsamic vinegar. Let caramelize for another 5 minutes.
- Serve the hot potato flans accompanied by the sweet and sour vegetables.
