Potato Flan

The potato flan is a delicious and comforting dish. Here is the recipe for a classic potato flan.

Ingredients

  • 800 g of potatoes
  • 100 g of grated Parmesan cheese
  • 2 eggs
  • 100 ml of milk
  • Nutmeg to taste
  • Butter as needed, to grease the baking dish
  • Salt and pepper to taste
  • Breadcrumbs (optional)
  • Extra virgin olive oil (for dressing)

Preparation

  1. Preheat the oven to 180°C.
  2. Boil the potatoes in salted water until they are soft. Drain them and let them cool, then peel them.
  3. Mash the potatoes with a potato masher or a fork until you have a smooth mixture.
  4. Add to the mashed potatoes the grated Parmesan cheese, eggs, milk, a grating of nutmeg, salt, and pepper to taste. Mix well all the ingredients until you get a smooth and homogeneous mixture.
  5. Grease a baking dish with butter and, if you like, sprinkle it with breadcrumbs for a crispy crust.
  6. Pour the potato mixture into the baking dish and level the surface with the back of a spoon.
  7. You can decorate the surface with small flakes of butter and an additional sprinkle of Parmesan if you wish.
  8. Bake the potato flan for about 30-40 minutes or until the surface is golden and crispy.
  9. Once cooked, let it cool for a few minutes before serving.

This flan can be enriched by adding diced cooked ham, chopped spinach, or any other ingredient according to your taste. It is a versatile dish that lends itself to many variations.

The potato flan originated as a recovery recipe to use up leftover boiled potatoes. With the addition of a few simple ingredients, it is transformed into a rich and flavorful dish. In some Italian regional variations, smoked Scamorza cheese or other cheeses are added to make the flan even tastier.
