Potato Cutlets

Potato cutlets are a simple and delicious dish, ideal as a side or even as a vegetarian main course. Here is the recipe:

Ingredients

  • 500 g of potatoes
  • 2 eggs
  • 100 g of grated cheese (Parmesan or Pecorino)
  • Salt and pepper to taste
  • Nutmeg (optional)
  • Breadcrumbs as needed
  • Oil for frying (preferably olive)

Preparation

  1. Boil the potatoes in salted boiling water until they are soft. You can leave them with the skin on and then peel them once cooked if you prefer.

  2. Mash the still-hot potatoes with a potato masher or fork to form a puree. Let it cool for a few minutes.

  3. To the potato puree, add one egg, the grated cheese, a sprinkling of nutmeg, salt and pepper to taste. Mix well until all ingredients are evenly combined.

  4. Take a portion of the mixture and shape into cutlets of the size and thickness you prefer.

  5. Beat the remaining egg in a deep plate and coat the cutlets first in the egg and then in the breadcrumbs, making sure they are well covered on both sides.

  6. Heat plenty of oil in a pan. When the oil is hot, fry the potato cutlets until they are golden and crispy on both sides.

  7. Drain them on paper towels to remove excess oil and serve hot.

Feel free to add chopped herbs (such as parsley or basil) or powdered onion or garlic to the potatoes to give your dish an extra flavor.

Potato cutlets can be enriched by adding diced cooked ham or speck to the mixture for a tastier and no longer vegetarian option. Moreover, for a truly Italian touch, try serving them with a drizzle of raw extra virgin olive oil and a sprinkling of Parmesan just before eating.
