Salmon in Potato Crust

Salmon in potato crust is an elegant and tasty dish, perfect for a special dinner. Here is the recipe to prepare it:

Ingredients

  • 4 salmon fillets (about 150-200 g each)
  • 800 g of floury potatoes
  • 2-3 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • Fresh rosemary (optional)
  • 1 clove of garlic
  • Lemon juice

Preparation

  1. Preheat the oven to 200 °C.
  2. Peel the potatoes and slice them into very thin slices, preferably with a mandoline. The idea is to create slices similar to those used for making chips.
  3. Take a baking tray and line it with parchment paper. Arrange the potato slices slightly overlapping to form a “carpet” on which you will then lay the salmon fillet.
  4. Season the salmon fillets with salt, pepper, and a little lemon juice.
  5. Place the salmon on the potato “carpet” and then cover the fish with more potato slices, as if you were “wrapping” it. Press lightly with your hands to make the potatoes stick to the fish.
  6. Brush the surface of the potatoes with a little extra virgin olive oil and, if you wish, add a little salt and chopped rosemary to flavor.
  7. Bake for about 20-25 minutes or until the potatoes are golden and crispy.
  8. Halfway through cooking, you can add a clove of garlic to the tray to further flavor the dish.

Remove the salmon in potato crust from the oven and let it rest for a few minutes before serving.
