Potato Crepes with Brie and Ham

Ingredients

  • 300 g of potatoes
  • 150 g of flour
  • 2 eggs
  • 250 ml of milk
  • Salt to taste
  • Black pepper to taste
  • Nutmeg to taste
  • 150 g of brie
  • 150 g of cooked or raw ham, depending on preference
  • Butter for cooking the crepes
  • Extra virgin olive oil

Preparation

  1. Start by boiling the potatoes until they are soft. Once cooked, drain them, peel them and mash them to obtain a puree.
  2. In a bowl, combine the potato puree, flour, eggs, milk, a pinch of salt, pepper, and a sprinkle of nutmeg. Mix well until you have a smooth and lump-free batter.
  3. Let the crepe batter rest for about 30 minutes.
  4. Heat a non-stick pan and add a bit of butter. When the butter is melted and begins to sizzle, pour a ladle of batter into the pan, and spread it out to form a fairly thin crepe.
  5. Cook the crepe on both sides until golden, then transfer it onto a plate.
  6. Add a slice of brie and a slice of ham on half of the warm crepe to allow the brie to start melting.
  7. Fold the crepe in half over itself and then again in half, forming a quarter circle, or simply roll it up.
  8. Repeat the process for the remaining crepes.
  9. Serve immediately.
