Potato, Cheese, and Bacon Bites

Potato, cheese, and bacon bites are a delicious and very simple snack to make. Here’s the recipe:

Ingredients

  • 500 g of potatoes
  • 100 g of diced bacon
  • 100 g of aged cheese (we can use Parmesan to stick with an Italian theme)
  • 2 eggs
  • Salt and pepper to taste
  • Flour as needed for breading
  • Breadcrumbs as needed for breading
  • Oil for frying

Preparation

  1. Boil the potatoes in salted water until they are soft. Drain and let them cool.
  2. Mash the potatoes with a potato masher or a fork in a large bowl until they turn into a puree.
  3. Add the grated cheese, bacon, eggs, salt, and pepper, and mix until you have a homogeneous mixture.
  4. Take a bit of the mixture and form small bites with your hands, rounding them well.
  5. Coat each bite first in flour, then in the beaten egg, and finally in breadcrumbs.
  6. Heat plenty of oil in a frying pan and when it’s very hot, fry the bites until they are golden-brown on all sides.
  7. Drain them on paper towels to remove excess oil.
  8. Serve hot as a delicious appetizer or as a second course.

Fun Facts

Potato bites are a very versatile variant that lends itself to numerous customizations. In Italy, for example, it is common to find this recipe with the addition of aromatic herbs such as rosemary or sage for an extra touch, or with speck instead of bacon for a Tyrolean version.
