Potato and Smoked Scamorza Cheese Flan

Ingredients

  • 800 g of potatoes
  • 200 g of smoked scamorza cheese
  • 2 eggs
  • 100 g of grated Parmesan cheese
  • 50 g of butter
  • Salt and pepper to taste
  • Nutmeg to taste
  • Breadcrumbs to taste
  • Butter to taste (for greasing the pan)

Preparation

  1. Start by peeling the potatoes and cutting them into pieces. Then, cook them in boiling salted water until they become tender. This might take about 20-30 minutes.
  2. Preheat the oven to 200 °C.
  3. Once cooked, drain the potatoes and mash them with a potato masher or a fork until you get a smooth puree.
  4. Add pieces of butter to the still hot mashed potatoes and stir until completely melted.
  5. Incorporate the eggs, grated Parmesan cheese, a grating of nutmeg, and adjust the salt and pepper to your taste. Mix all the ingredients until you get a homogeneous mixture.
  6. Cut the smoked scamorza cheese into cubes.
  7. Grease a baking dish or a flan mold with a bit of butter and sprinkle the bottom and sides with breadcrumbs.
  8. Pour half of the potato mixture into the mold, distribute the smoked scamorza cubes evenly, then cover with the remaining potato mixture.
  9. Sprinkle the surface with some more breadcrumbs and a few flakes of butter to achieve a golden crust.
  10. Bake in the oven for about 20-25 minutes or until the surface of the flan is well browned.
  11. Let it rest for a few minutes before unmolding and serving.
