Potato Cake

The potato cake is a simple and tasty dish, very versatile and loved for its crispy exterior and soft interior. Here’s how to prepare it.

Ingredients

  • 1 kg of potatoes
  • 100 g of grated Parmesan cheese
  • 2 eggs
  • 100 g of butter
  • Salt and pepper to taste
  • Nutmeg (optional)
  • Breadcrumbs (enough to bread)

Preparation

  1. Start by peeling the potatoes and cutting them into cubes. Boil them in plenty of salted water until they become soft.

  2. Once boiled, drain them and mash them with a potato masher or a fork to obtain a puree. Allow the potato puree to cool down.

  3. Add the eggs to the potato puree, melted butter, grated Parmesan cheese, salt, pepper, and nutmeg to taste. Mix all the ingredients until you obtain a homogeneous mixture.

  4. Take portions of the dough and shape them into small round cakes. Coat each cake in breadcrumbs, making sure to cover them evenly.

  5. Arrange the cakes on a baking tray lined with parchment paper. You might also add a drizzle of oil or some butter flakes over each cake for extra browning.

  6. Bake in a preheated oven at 200 °C for about 20-25 minutes or until the cakes turn golden and crispy on the surface.

  7. Serve hot as an appetizer or a side dish.

The potato cake can be enriched with additions such as cooked ham, bacon, various cheeses, or chopped aromatic herbs for an extra note of flavor.
