Potato Burgers

Potato burgers are a great vegetarian alternative to traditional meat hamburgers. Here’s the recipe with an Italian twist.

Ingredients

  • 500g of potatoes
  • 50g of grated Parmesan cheese
  • 2 tablespoons of chopped fresh parsley
  • 1 clove of garlic, chopped
  • Salt and pepper to taste
  • Breadcrumbs as needed
  • 1 egg
  • Extra virgin olive oil for cooking

Preparation

  1. To start, wash the potatoes and boil them in boiling water for about 15-20 minutes or until they are tender. Once ready, drain them and let them cool down.
  2. When the potatoes have cooled enough to handle, peel and mash them in a large bowl to obtain a puree.
  3. Add the grated Parmesan, chopped parsley, garlic, salt, and pepper. Mix well.
  4. Crack an egg and beat it lightly, then incorporate it into the potato mixture, adding also enough breadcrumbs to make the mixture consistent enough to form burgers.
  5. Divide the mixture into equal portions and shape it into round burgers.
  6. Heat a non-stick pan and add a drizzle of extra virgin olive oil.
  7. Cook the potato burgers in the pan for about 4-5 minutes per side, until they have acquired a nice golden crust.
  8. Serve the potato burgers hot.

You can serve these potato burgers with a side of grilled vegetables or a fresh salad. If you feel like experimenting, you can add other herbs to your liking or spices to give a unique flavor to your burgers.
