Potato Baskets

Potato baskets are a tasty dish that can be served as an appetizer or as a side. Here’s how to prepare them:

Ingredients

  • 500 g of potatoes
  • 80 g of grated Parmesan cheese
  • 1 egg
  • Salt and pepper to taste
  • Butter as needed for greasing the molds
  • Chopped chives (optional, for garnish)

Preparation

  1. Preheat the oven to 180 °C.
  2. Peel the potatoes and grate them with a coarse grater, then squeeze them out to remove excess water.
  3. In a bowl, combine the grated potatoes, grated Parmesan cheese, egg, salt and pepper. Mix well until you have a smooth mixture.
  4. Grease muffin tins or small bowls with butter.
  5. Divide the potato mixture into the molds, pressing down on the bottom and sides to form a sort of “nest”.
  6. Bake in the oven for about 20-25 minutes or until the edges of the baskets become golden and crispy.
  7. Take the baskets out of the oven and let them cool before gently unmolding.

Once ready, you can fill the potato baskets with whatever you like, such as a stuffing of cheese and ham, sautéed vegetables, sautéed mushrooms, or even an egg wedge for a brunch version.
